I'm the kind of cook who reads four recipes before making one. I love the creative part of combining ideas, tweaking flavours, timing multiple dishes to land together. But there's always that moment of doubt: is this going to work, or have I just wasted an evening?

The truth is, I've always wanted to be more adventurous with food. But I hate the uncertainty of trying something new and not liking it. For years I've wished I could somehow taste-test the future, to know before I commit that the risk is actually worth taking.

Add three kids with three different palates, and cooking became less joy, more negotiation. There's a particular kind of defeat in clearing plates that still have food on them, knowing the "I'm hungry" complaints are about two hours away.
